Tomato, Cucumber, and Avocado Salad

This is perfect for a light super with seed crackers and chutney or a side dish for a more complex meal.


2 cups diced cucumbers (about 1 medium cucumber)

1 cup halved cherry tomatoes

11/2 cups cubed avocado (about 1 large avocado)

1 cup green olives, pitted and halved

1/2 cup feta cheese

1 tablespoon balsamic vinegar

1/4 cup extra-virgin olive oil

1 teaspoon Himalyan salt

1 /2 teaspoon freshly grated black pepper


  1. In a medium sized bowl, toss together the cucumbers, tomatoes, avocado, and olives.
    Sprinkle the feta cheese on top.

  2. Pour the vinegar and olive oil over the top and toss

  3. Season with salt and pepper
